Dinner is served! A Bowl of TQR (Tofu, Quinoa, and Red Peppers)


The mystery of the Bowl of TQR has been solved! It's a bowl of Tofu, Quinoa, and Red Peppers and it's just as colorful as any guess as to what it might have been.  Not sure what I'm talking about? When I shared the full recipe for this week's What's for Dinner? Wednesday meal HERE>>, I suggested telling your dinner guests that you were whipping up a bowl of TQR to see how they would react.  It sounds a lot more fun than a bowl of Tofu, Quinoa, and Red Peppers, right?

This dish isn't just Tofu, Quinoa, and Red Peppers, it also has some deliciousnesses added to it from a special sauce made of maple syrup, soy sauce, sesame oil, and a few other ingredients.  It came out so good, that it almost makes me want to go vegetarian in order to experiment more with tofu!

What's for Dinner? Wednesday: A Bowl of TQR (Tofu, Quinoa, and Red Peppers)


Wondering what to make for dinner tonight? You're in luck and just in time for What's for Dinner? Wednesday! This week's recipe is a vegetarian dish, a Bowl of TQR (Tofu, Quinoa, and Red Peppers). I think the recipe sounds more fun as initials, because then your dinner guests have no clue what you're up to while you work. Maybe you're making The Quintessential Recipe or planning your own version of The Quiet Revolution.  They will never know until they sit down for dinner or catch you in the act of whipping up a bowl of the stuff.  Either way a little mystery never hurt anyone.

This recipe has your oven and stove working for about 30 mins, but you'll only actively involved for about 5 mins.  Gotta love that! Even better? Your bowl of TQR will be brimming with protein from the tofu and quinoa.  I'm not a tofu cooking pro yet, so the recipe I'm sharing with you today has been modified from one I found on Pop Sugar, but the more I use it the more respect I have for it.

Getting back to our bowl of TQR, here's what you'll need to serve a Bowl of TQR to Four:

10 oz of tofu, cubed
2 red peppers, sliced
cooking spray
2 tsp toasted sesame oil
3/4 tsp salt
1/2 tsp freshly ground pepper
1.25 cups quinoa
3 cups water
1.5 cups shredded carrots
1.5 tbsp reduced-sodium soy sauce
1 tbsp pure maple syrup
1.5 tsp apple cider vinegar
1.5 tbsp sesame seeds
1.5 tsp fresh ginger
1 clove fresh garlic, minced

Putting it all together:

Step One: Preheat your oven to 450°F and grab a large bowl. Don't put the bowl in the oven. Do add your cubed tofu, sliced red peppers, sesame oil, salt, and pepper to the bowl and mix them together.  Spray a baking sheet with cooking spray and spread out the ingredients from the bowl on your baking sheet.  Once your oven is ready, cook your tofu until it has browned slightly.  Your total cook time should be 15-20 mins.

Step Two:  You know what else takes about 20 mins to cook? Quinoa! It's almost too convenient....Set up a pot that has a cover on your stove and cook your quinoa and water on high until the water starts to boil.  Then turn the heat down so your protein-packed grain is set to simmer. Cover the pot and allow it to cook for 10 mins before adding your shredded carrots.  After another 10 mins the water should be absorbed by your quinoa and you'll be ready to take it off the oven.

Step Three: By now your tofu should almost be done with its first round in the oven.  Check on it and then prepare the secret sauce that you'll add to the top.  In a small bowl, combine your soy sauce, maple syrup, and vinegar.  Drizzle this liquid mix over your tofu and then sprinkle sesame seeds on top before returning your your tofu to the oven for a final 8 to 12 minutes of roasting.

Step Four:  Stir your ginger and garlic into your quinoa and then divide it evenly among four plates. Check that tofu one last time and when it's done, divide it up and place each serving of tofu on it's own bed of quinoa.

And you're done! Announce to your dinner friends that their Bowl of TQR is ready and see if they are intrigued by the mystery name, or not.

Dinner is served! Argentinian Flatbread Pizza


This Wednesday's dinner at Fit Armadillo was Argentinian Flatbread Pizza.  It takes a little time to wait around for the dough to rise, but the result is nothing less than scrumptious.  As is this flatbread is vegetarian, however, you can add your favorite meat to make it a more substantial dish.  Chock full of veggies and fresh herbs, one sixteenth of this flatbread is less than 150 calories.  To see the full recipe click HERE>>

What's for Dinner? Wednesday: Argentinian Flatbread Pizza for a Healthy Day One of 2014!



Last month seemed to be a month of pizza. At the beginning of the month, I hosted a giveaway contest for a Seasons 52 gift card good for one flatbread pizza. Last week, I was enjoying my favorite pizza of all time at Pizzeria Regina’s in Boston, Massachusetts.  Somehow, I still can’t get enough of this tasty meal so to start the New Year, I’m sharing with you one of my favorite flatbread pizza recipes of all time.  

The recipe is for Argentinian Flatbread Pizza and was originally published by Cooking Light.  I’ve saved this recipe for New Year’s Day because you’ll be making your own dough and that can be a little too time-intensive for a normal weeknight. However, if you have today off today the dough making process shouldn’t interfere with your schedule. Use the hour it takes for the dough to rise to enjoy a little cat nap to feel ready to go back to work tomorrow because you're well rested and well fed.  

The ingredients listed below allow you to make the flatbread base, a black bean spread topping, and roasted red peppers in your own kitchen. If you are short on time, you’re more than welcome to buy your own dough and/or roasted peppers.  I won’t judge!  

Read on to find out what you’ll need to make this delicious flatbread and the black bean spread:

Black Bean Spread Ingredients:

1/2 cup chopped onion
1 - 15  oz can black beans, rinsed and drained 
1 - 14.5 oz can of diced tomatoes, undrained

Flatbread Base and Topping Ingredients:

1 red bell pepper
1 tbsp cornmeal
Cooking spray
1 tbsp yeast
1/8 tsp sugar
1 cup warm water (100° to 110°)
3 cups all-purpose flour
1 tsp salt
1/2 cup Parmesan cheese
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
2 tbsp olive oil
1 tbsp lemon juice
2 tsp garlic, minced

How to make your delicious flatbread pizza:
*If making your own Roasted Red Peppers, preheat the broiler now

Step One: To save time, make your flatbread dough first.  You’ll need your yeast, sugar, half a cup of warm water, and a bowl.  Pour the water in the bowl and use it to dissolve the yeast and sugar.  Let the mixture sit for 5 minutes so the yeast wakes up, gets something to eat, and gets ready to make the CO2 that will allow your dough to rise (did I mention I used to teach Biology? we had  a whole lab about yeast. It was a lot of fun except for when it came time to grade lab reports….).  

Step Two: While you’re waiting on your yeast, get your flour ready.  If you live someplace humid, like, oh, I don’t know, Houston, TX, try to measure the flour with a kitchen scale.  It will come out a LOT more scrumptious.  Once you have your three cups ready, add them, another half cup of warm water, and salt to your yeast mixture.  Stir it up until you’ve made flatbread dough.  Plop that bad boy in your bread machine if you have one (if you don't have one, you need to get on that-best kitchen gadget eva!).  If you don’t have a bread machine yet, get ready to get a little sticky.  Add some flour to a clean surface where you can knead your dough.  You’ll want to work on it for about 10 minutes so that it is smooth and flexible.  

Step Three: Set your dough up to do it’s thing! Find a bowl that could fit two balls of your flatbread dough and coat it with cooking spray.  Place your smooth ball of dough in the bowl, cover it, and place it in a warm place for about 1 hr or until it grows to double it’s original size. 

Before you take your nap, take the time to prepare the Black Bean Spread and Roasted Red Peppers by moving on to Step Four. Or don't-it takes about 1 minute to make the spread and 12 mins of cooking time to make the peppers...

Step Four: Make your Roasted Red Peppers. If you have the time, this will save you some good $$ since it's a lot cheaper to make your own that to buy pre-made peppers.  All you need to do is make sure your broiler is heated up and find a pepperCut the pepper in half lengthwise and remove any seeds and white sections.  Then line a baking sheet with tin foil and place the pepper halves on top skin side up.  Press on the peppers with your hand to flatten them and then pop them in the broiler for 12 minutes.  When they’re done they’ll be slightly blackened.  Put your freshly roasted red peppers in a zip-lock bag and seal them for 10 minutes before cutting them into smaller strips.  

Step Four point Five: Make your Black Bean Spread while your peppers are cooking or hanging out.  All you need to do is put your beans, onion, and tomatoes in a blender and whip them up until the original parts can’t be distinguished from one another.  You’ll only need 1.5 cups for the pizza so measure that out and then save the rest for a healthy dip!

Step Five: Back to business and flatbread time.  Check on your dough and if it has risen enough, preheat your oven to 450 degrees to get it ready.  Then, find a baking sheet and sprinkle your cornmeal on top.  Take your dough and roll it out to a 14 x 11 inch size before placing it on your baking sheet.  Then, get your 1.5 cups of designated Flatbread Black Bean Spread and spread it over dough. Sprinkle the top of the flatbread with your Parmesan cheese before putting it in the oven to bake at 450° for 13 minutes.

Step Six: While your flatbread is cooking, make your chimichurri drizzle. To do this, place your parsley and the remaining ingredients in bowl and mix to combine them.

Step Seven:  When your flatbread is done cooking in the oven, drizzle your freshly made chimichurri mixture on top. Cut up a slice and top it with your freshly (or store fresh) roasted red peppers.

Dinner is served! Shrimp and Grits and Peppers and Tomatoes, oh my!

Here's a look at tonight's dinner: Shrimp + Grits + Peppers + Tomatoes! With this meal you and your guests will enjoy healthy doses of protein, iron, vitamin A and vitamin C.  Had a picky eater tonight? Don't get mad, get glad! You can tell them to literally kiss your grits for not appreciating the whole 10-15 minutes you slaved over the meal.

What's for Dinner? Wednesday!

Do you know what day it is? Go ahead and check your calendar (or just look up one line). Yup! It's Wednesday! Here at Fit Armadillo Wednesdays have a special place in our and our husband's hearts because it means we're cooking up one of our favorite recipes!  This week's "What's for dinner? Wednesday" meal is a southern favorite: grits! We've added shrimp to get in some protein and peppers for some veggie power. Sometimes we've made this and thrown in corn. Tonight, we might add in tomatoes (the food wasting police have been on us to use them and we don't want to get arrested/hate being nagged). Feel free to get creative! Shrimp and Grits Grocery List   - Serves Four

Shrimp: 
Olive oil cooking spray
1 medium red bell pepper
12 oz medium raw peeled shrimp
1 tbsp safflower oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp ground pepper
1/2 tsp sea salt
2 medium scallions

Grits:
1/2 Cup Quick-Cook Grits
1/2 tsp garlic powder
1 tsp Worcestershire sauce
1/8 tsp group pepper
1/2 tsp sea salt
1 oz shredded reduced-fat sharp cheddar cheese

Ready to get cooking? So are we! But, we'll finish typing up the recipe instructions first.  God knows we've already wasted enough time watching and re-watching all of the Zesty Guy commercials on YouTube.  Did you miss our Facebook post to help you find a beautiful pepper? OK back to business! Total time is only 20 minutes and total hands on time is only 10 minutes (so save inviting Zesty Guy over via twitter for another meal or make a salad with your grits).

UNO: Whip up those grits, y'all!  Haven't made grits before? Don't worry, we're here to help.  Pour 2 cups of water into a medium-sized pan.  Bring your water to a boil and then add in your 1/2 cup of grits.  Let the water to return to boil.  Bubbling? Good! Reduce the heat to medium-low and cover your pan.  It should take about 5 minutes for your grits to cook. Once they're all done (the grits have absorbed the water), remove the pan from the heat, stir in your garlic powder + Worcestershire + pepper + salt.  Put the cover back on and put your pan off to the side.

DOS: Pepper time!  Make sure you have a good pepper by checking here. While you're watching the video, heat a large nonstick skillet on medium-high.  Coat the skillet with cooking spray, add your red pepper (unless you determined that it's no good....If it's not good, tweet @TheZestyGuy and see if he's really at our culinary service) and coat your pepper with some cooking spray.  Keep stirring your pepper for about 4 minutes so that it's lightly brown on the edges. Done? Set that pepper aside.

TRES: In a medium bowl, combine your shrimp and all other ingredients except for your scallions and cheese (save the best for last)!  Add this mixture to your skillet and cook on medium-high for 2 minutes without stirring.  After those first two minutes, go ahead and stir it up for two additional minutes.  Once your shrimp is opaque you can remove it from the stove.  Stir in your red pepper and scallions.  

CUATRO: Divide your masterpiece between four plates.  Sprinkle the cheddar cheese on top. Before adding extra cheese, try it like this! We think you'll like it just fine.  Plus, if The Zesty Guy pays you a visit, you'll want to save room for that salad.  Have a dinner guest who you think might try to use up all your cheddar? Kindly, remind them they'll never have abs like The Zesty Guy if they OD on cheese.
