Here's our Poached Cod served on top of a bed of asparagus all topped with our special sauce for a little extra flavor. We love this meal because it takes under 20 minutes to make and is very healthy. The need for dry white wine for the sauce also gave us an excuse to visit Trader Joe's, one of our favorite grocery stores. We were able to get a bottle for under $3! It was almost like being in Paris, France again (although, we're pretty sure the wine won't taste nearly as good out of a glass as a Parisian one would).

The sauce is made from boiling the juice of half of a lemon, dry white wine, cornstarch, shallot, bay leaf, and peppercorns.
